Pear & Kale Salad

This sweet meets salty pear and kale salad, embodies Autumn. It is so simple to make and the cashew “cheese” can be stored in the fridge for many days and used in many other dishes. Win-win!


INGREDIENTS

  • 2 pears⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 3 cups of washed and chopped kale leaves

  • 3 cups of washed spinach ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/2 red onion ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • Toasted almond flakes ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/2 cup or cashews⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 garlic clove ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 tbsp apple cider vinegar ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1- 2 tbsp olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • Salt and pepper ⠀


  1. Start with massaging the kale and spinach leaves with a little bit of olive oil and salt. Let stand for at least 10 minutes. ⠀⠀

  2. In a food processor, mix together olive oil, cashews, garlic, apple cider vinegar, salt and pepper, until you have a “cheesy” consistency.

  3. Add sliced pears and red onion onto the salad leaves.

  4. Top with the cashew “cheese” and toasted almond flakes (optional) ⠀
