Power Granola

A granola with added protein, zinc and healthy fats bringing a good start to the day. Pair the granola with fermented coconut yoghurt to help feed the friendly gut bacteria - a great start to the day!


INGREDIENTS

  • 2 1/2 cup oats⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/2 cup quinoa flakes⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/4 cup sunflower seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/4 cup pumpkin seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 cup nuts such as almonds, hazelnuts, cashew and walnuts⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/2 cup maple syrup ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/4 cup chia seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1 tsp vanilla⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 1/2 tsp cardamom⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 2 tsp cinnamon⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • A pinch of salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 2 tbsp milled flaxseeds⠀⠀⠀⠀⠀⠀⠀⠀⠀

  • 2 tbsp coconut oil ⠀⠀⠀


  1. Heat the oven to 160 ˚C.⠀⠀⠀

  2. Mix everything together in a bowl. ⠀⠀⠀⠀⠀⠀⠀

  3. Put the mix on a tray or two (use baking sheet) in the middle of the oven for about 35-40 minutes tossing every 10 minutes.

  4. Let it cool down and then enjoy!
