Power Granola
A granola with added protein, zinc and healthy fats bringing a good start to the day. Pair the granola with fermented coconut yoghurt to help feed the friendly gut bacteria - a great start to the day!
INGREDIENTS
2 1/2 cup oats⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup quinoa flakes⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup sunflower seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup pumpkin seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup nuts such as almonds, hazelnuts, cashew and walnuts⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup maple syrup ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup chia seeds⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tsp vanilla⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 tsp cardamom⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tsp cinnamon⠀⠀⠀⠀⠀⠀⠀⠀⠀
A pinch of salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbsp milled flaxseeds⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tbsp coconut oil ⠀⠀⠀
Heat the oven to 160 ˚C.⠀⠀⠀
Mix everything together in a bowl. ⠀⠀⠀⠀⠀⠀⠀
Put the mix on a tray or two (use baking sheet) in the middle of the oven for about 35-40 minutes tossing every 10 minutes.
Let it cool down and then enjoy!
